I’ve always been a big fan of salads, especially summer salad recipes. But not the sparse lettuce leaf type of salads… the real hearty ones, packed with flavour and wholesome, nutritious ingredients. As a busy working mom, my immune system is often low, however, when I plan in advance and eat well (especially at lunchtime), I find that I instantly feel better and more energised.
I try to pack as much good stuff as I can into my summer salad recipes, and throw whatever’s in the fridge into that bowl! A winning combination is always a lean protein, slow-release carbohydrate and loads of fresh veggies and fruits if the recipe calls for it. Plus, of course, a light tangy dressing to finish it off.
Homemade is best
Don’t be fooled by the “so-called” healthy store-bought salads. They’re often loaded with rich, creamy dressings, deep-fried proteins and the wrong kinds of fats. Rather make your own salads and dressings and you’ll be well on your way to a healthier lifestyle.
Make lunch for the week a breeze and give my three favourite salads a try!
- If you’re feeling hungry and need plenty of energy, my hearty rice salad will keep you fuller for longer.
- In the mood for something tangy and delicious? My Mexican salad is a winner every time.
- Low in carbs and high in healthy fats and protein, my avo, nut and feta salad won’t disappoint.
If you’re often on the go at lunchtime, no need to fret. I prep my salads the night before and store them in my favourite Sistema containers, and they’re good to go... whether I’m on a shoot, at the desk or running errands with my daughter, Bella.
The best Sistema containers for salads are the Salad To Go containers, because they’re specifically designed to carry salads on the go, as the name suggests! I find them so convenient and easy to use because there’s a place for every salad ingredient. Simply layer your salad greens into the base, followed by the veggies, fruits, nuts or lean protein in the tray compartment and lastly, pop your dressing into the pot and off you go! I also love that the container comes with a knife and fork that you clip into the lid, so there’s no need to carry separate cutlery with you.
