3 Summer salad recipes you must try
I’ve always been a big fan of salads, especially summer salad recipes. But not the sparse lettuce leaf type of salads… the real hearty ones, packed with flavour and wholesome, nutritious ingredients. As a busy working mom, my immune system is often low, however, when I plan in advance and eat well (especially at lunchtime), I find that I instantly feel better and more energised.
I try to pack as much good stuff as I can into my summer salad recipes, and throw whatever’s in the fridge into that bowl! A winning combination is always a lean protein, slow-release carbohydrate and loads of fresh veggies and fruits if the recipe calls for it. Plus, of course, a light tangy dressing to finish it off.
Homemade is best
Don’t be fooled by the “so-called” healthy store-bought salads. They’re often loaded with rich, creamy dressings, deep-fried proteins and the wrong kinds of fats. Rather make your own salads and dressings and you’ll be well on your way to a healthier lifestyle.
